🍋 Lemon Pound Cake (Quick Recipe)

📝 Ingredients

For the cake:

  • 1 cup (225g) butter, softened
  • 1 cup sugar
  • 3 eggs
  • 1½ cups all-purpose flour
  • 1 tsp baking powder
  • ¼ tsp salt
  • 2 tbsp lemon juice (fresh)
  • 1 tbsp lemon zest
  • ½ tsp vanilla extract
  • ¼ cup milk

For the glaze:

  • 1 cup powdered sugar
  • 2–3 tbsp lemon juice

🔥 Instructions

1. Preheat Oven

Set to 180°C (350°F) and grease a loaf pan.

2. Cream Butter & Sugar

Beat butter and sugar until light and fluffy.

3. Add Eggs

Add eggs one at a time, mixing well after each.

4. Mix Dry Ingredients

In another bowl, combine:

  • flour
  • baking powder
  • salt

5. Combine Everything

Add dry ingredients gradually to the batter.
Then mix in:

  • lemon juice
  • zest
  • vanilla
  • milk

👉 Mix until smooth (don’t overmix).


6. Bake

Pour into pan and bake for 40–45 minutes
(or until a toothpick comes out clean).


7. Make Lemon Glaze

Mix powdered sugar with lemon juice until smooth.


8. Finish

Let cake cool slightly, then drizzle glaze on top.
